5 Minute Sauteed Spinach


Monday is back!  I hope you had a great weekend.  I had a busy yet productive couple days.  I was able to complete some tasks that have been on the to do list for a very long time.  As well, I spent some quality time with the family which is always great.

Todays recipe is killer easy and super tasty – well if you like spinach of course.  I am a huge fan of spinach so when I make this dish, there is rarely any leftovers.  This recipe also allows you to be flexible - use what ingredients you have on hand, mix and match flavors and enjoy the freshness.

Sauteed Spinach

A 5 minute side dish packed with flavor.  Give this a try  – you will be very glad you did!

Ingredients

  • 4 cups spinach
  • 1/4 cup low fat cream
  • 2 cloves garlic crushed and made into paste
  • 1/8 teaspoon cayenne
  • 1/8 teaspoon black pepper
  • 1/4 cup pine nuts
  • 1/4 cup chopped green onion
  • Handful of chopped fresh basil
  • Salt

Method

  1. Preheat pan and add olive oil.
  2. Add spinach and allow to wilt down. Stirring for 1 minute.
  3. Add garlic, cayenne, black pepper. Stir for 2 minutes.
  4. Add low fat cream -stir and leave until bubbly.
  5. Top with pine nuts, green onion and fresh basil.
  6. ENJOY!

Zesty Tip: To make garlic paste, add a bit of salt to your cutting board and crush the clove of garlic on top.  Then using your knife smear the garlic back and forth into the salt mixture.  The salt will help form a paste by breaking down the garlic and you are ready to go.

So there you have it.  A simple dish packed with flavor that goes great with pretty much anything.  You can also toss some protein in there and have it as a main dish. I hope you enjoy the spinach!

    I love this recipe! What could I substitute for the cream due to my allergy issues!

    I haven’t had fast food in over 10 years, so I don’t rely on it much for myself. I have been known to grab it for my husband when he has a craving or when I get off late from work.

    Garlic paste…easy! Thanks for the tip. I always have a hard time with weekends as well. I still eat pretty healthy, I just always eat a lot more…usually out of boredom. Ooops. :)

    Looks good to me! I’m rather ambivalent about spinach, can take it or leave it, but my girlfriend loves it. Maybe I can make this for her on Valentines day.

    @Megan – You can try to substitute Soy milk instead of the cream but also add a slurry( such as flour water to thicken the sauce slightly) Hope this helps.

    wow, sounds like a great, quick, combo :) like a better for you creamed spinach? (which i’ve never tried…)

    i love cooking on the weekends to stock up for the week (less time at night, and i’m hungry!), but also leads to a little indulgence… :) if boredom strikes, watch out!

    Oh my! I have all of these things in my fridge. Well, sort of. I have kale instead of spinach, and half and half instead of cream. Will this work? I wish I didn’t have to work; I want to go home and try it now.

    And I’m just the opposite with weekend eatings.. because i spend more time at home and more relaxed, I prepare food with more time, so I eat better. But I guess if your weekend is more busy, it will be hard.

    My hubby is getting his MA, and so he comes home late for dinner 2 nights/week. On those nights it’s easiest just to say, “i am ordering a pizza!” and be done with cooking. Also, when I’ve had a bad day at work, I often want to have dinner at a super unhealthy local diner that covers everything in butter. I am getting better at resisting.

    Oh! My! God! This looks so beautiful. I, too love spinach and always cook extra. I fold eggwhites into the leftovers the next morning for a yummy breakfast. Try it sometime. Out of this world.

    Great photo! Recipe looks delish – I love spinach! As for my “weak” day(s) of the week – has to be the weekend but I allow it. I am very strict with my diet Mon-Thurs. Allow Friday as a day to eat whatever I feel like and Sat., Sun are considered “watch yourself, but don’t pass up something truly delightful”…days. That way I don’t wolf down an entire cake or pizza due to deprivation.
