A Salad to Remember: Fruit, Veg, Nuts and Raisins

Happy Friday! Aww come here and give me a great big hug. Another weekend is upon us and honestly I cannot wait! For all the US folks, a long weekend, which is even better. I wanna share a fun salad that incorporates flavor, texture and whatever you have in your fridge. My style of salad. It was part of the family Sunday Feast and really simple to prepare.

Do you ever find salads difficult to make?  I find that when you use fresh ingredients the amount of effort you have to put into the dish lessens.  Does that make sense?  Whether it is related to cooking meat, vegetables, casseroles or even salads – fresh top quality ingredients make the cook/chef/regular dad look good.

Ingredients

  • Baby Spinach
  • Boston Leaf Lettuce
  • Blueberries
  • Strawberries
  • Roasted almonds ( sliced)
  • Raisins
  • Tomatoes
  • Cucumber

Method

  1. Roast almonds in dry pan until crispy ( remove from heat and set aside )
  2. Wash all both lettuce and spinach and dry on a tea towel
  3. Toss everything in a bowl together
  4. Dress with your favorite dressing
  5. ENJOY!

Zesty Tip: For me the biggest salad tip is not to make it too far in advance, ensure there is no moisture on the leafy vegetables as this will cause it to go limp and never dress the salad until just before serving.  You can also even let your guests dress their own and serve it on the side.

I’ll be honest – salad is something I hate making at home. It just never lives up to my expectations. I love creative entree salads when I go out, but when I try to make them at home, they fall flat. It makes me sad.
