Hey Zesty! I love your blog and have been reading for a while, just never got around to leaving a comment. Thanks for sharing the lentil salad, I LOVE lentils, and will definitely be trying this recipe. I’ll probably give the mini cheesecakes a try as well, since I am gluten free, and have never thought to use chex for a crust before, what a great idea! This sounds like a wonderful dish. I’ve only been introduced to lentils in the 4 months since I went vegetarian, but now it seems like they’re turning up everywhere. Black rice looks very interesting, that’s on my list of stuff to try. Thanks!
