Chicken Fried Rice & Zesty Snowed In!

It’s back to the grind, the party is over!  Relaxation time complete - yes another work day is here.  Happy Monday!

Chicken Fried Rice

Here is a simple yet comforting dish that I make quite regularly. This recipe is one of my Mom’s creations. Whenever she makes it… it never lasts more than 10 minutes. It really cannot get any easier to prepare – and this rice is fabulous!  The flavor and texture is so good.  I sometimes stir a few fried eggs in at the end but I did not have any in the fridge.

This dish also allows you to stir in whatever flavors you may like in the rice – extra veggies, no meat (tofu instead) you name it.

Ingredients

  • 2 Cups Long Grain Rice
  • 3 1/2 Cups of Water
  • 1/2 Cup Soy Sauce
  • 1/4 Cup Oil
  • 1/2 Pack Onion Soup Mix
  • 2 Cups Cooked Chicken
  • 1 1/2 Cups Chopped Mushrooms

Method

  1. Preheat oven to 350 Degrees
  2. Using a large roaster, place all ingredients in and stir
  3. Cover with lid
  4. Cook with lid for 90 minutes – stirring after 45 minutes
  5. To get a nice dark color, I cook for the last 10-15 minutes uncovered.
  6. Enjoy!

Zesty Tip: If your rice is taking longer than usual to cook, you may want to check how long it has been sitting in the cupboard. Older rice can lose some of its moisture, requiring more water and a longer cooking time than fresh rice.

Zesty Snowed In

As promised, I told you I would share the snowed in photos from Friday.  We ended up getting 51 cm of snow or 21 inches of snow.  But it was not only sheer volume of snow but the winds that gusted all day which caused some crazy drifts.

See below for some shots of the snow.  It actually was pretty fun shoveling as the temperature was not that cold… but it got dark pretty fast.

whoa! that’s a lot of snow, we are long overdue for a major snowstorm here in NYC. The last time we had a blizzard was in 2004!

WOWZERS! I saw on the news that the Maritimes were getting pummeled with snow! That’s crazy. Your house looks like mine did on Dec 19 when we got hit. It’s been one rough winter so far!

uh oh, no eggs! still looks like a winning dish :) shoveling is a great workout, except i have a tendency to do it a little one-sided!

Hey there, I found your blog and love it! I was wondering can I use brown rice rather than long grain and may I substitute chicken bouillon rather than the onion soup packet?

Royal – You can definitely add brown rice just adjust the cooking time as it will take longer to soften. As for the chicken bouillon – you can add it… just try and get a low sodium one as they tend to be very salty.

@Jackie – I usually just bake it off in the oven at 350 degrees or even use left over chicken for this recipe.

Thanks, and for any readers that are having trouble chopping onions without the crying, here’s an incredibly simple tip – put them in the fridge for a few hours, then chop them straight away after taking them out! No more tears! I found some more onion soup recipes here if anyone wants to try some more variations.
