Cool Chicken Sandwich w/ Red Pepper Jelly

Happy Monday to you!  Lets just say that this weekend was adventurous.  I feel like I have a million things on the go in addition to prepping for the big trip to BOSTON.  I am getting the Honda CR-V cleaned inside and out this morning in addition to getting some car organizers installed to help keep us on track during the big trip.

As for the eats, I thought I would share with you a great sandwich for a summer treat, potluck item, shower or party.  They are super simple to make yet packed with flavor and are nice for a change of pace.

Ingredients

  • 2 Cans of cooked chicken
  • 2 Tbsp. red pepper jelly
  • 1/4 Cup cream cheese (softened)
  • 1 Tbsp. Mayonnaise
  • Cracked black pepper
  • Hint of curry powder
  • Finger Rolls

Method

  1. Open can(s) of chicken and drain off liquid
  2. Place in a large bowl and add mayonnaise, curry powder; mix thoroughly
  3. Add soft cream cheese and mix with a fork
  4. Fold in pepper jelly
  5. Add pepper and test for flavor
  6. Slice rolls open on top; fill with mixture
  7. ENJOY!!

Zesty Tip: To add more dimension to this sandwich I like to add nuts, apple chunks or even celery.  The crunch is nice!

Zesty Birthday Gift

So as you know I travel a fair bit for work and I usually rent cars when I arrive to my destination.  I am not great with maps so I always borrow my friends GPS (thanks Chris).  Having said that,  look what arrived for my birthday!!

Oh neat, I really need a GPS, I’m SICK of using mapquest! The chicken salad sandwich looks really good. The red pepper and curry powder are unique additions that I NEVER would have thought to add to my chicken salad! I’m a huge curry fan, and I like spice, so I’m sure it’s delicious.

I agree with you…I need a GPS too.

FWIW – I gave up on Mapquest a loooong time ago as they kept getting me lost and sending me to dangerous out of the way places where construction had re-routed or closed roads.

I highly recommend http://www.randmcnally.com until you can buy a GPS. They are the expert map people so I figure they know what the heck they are doing re: online driving directions and they haven’t gotten me lost yet!

I got a jar of red pepper jelly from the Epicure folks and was trying to imagine ways to use it other othan on crackers & cheese!

Those GPS’s COMPLETELY changed the way we travel on the road!! Breath of fresh air they are :-)

I love pepper jelly on my BLT but never thought to put it in my chicken sammy. Great idea and have fun with your new GPS in Boston! :)

Red pepper jelly is one of my favourite additions to any sandwich. My aunt makes a great homemade jelly, and always makes sure to give me some for Christmas :D

If anyone needs a recipe for Red Pepper Jelly, one follows. I love it with crackers, cream cheese then topped with the jelly. Peggy

RED PEPPER JELLY

4 lg. red bell peppers (about), seeded
5 1/2 c. sugar
1/3 c. fresh lemon juice
1 pkg. Certo
3/4 c. distilled white or wine vinegar

Finely chop peppers in processor or run through grinder. Strain, pressing lightly. Measure 2 full cups and 1/4 cup pepper juice. Discard remaining juice. Combine ground peppers, pepper juice, sugar and vinegar in 3-4 quart saucepan. Bring to boil, stirring frequently. Remove from heat and let stand 15 minutes. Reheat to boil, stirring frequently. Add lemon juice and return to boil for 1 minute, stirring. Add pectin and let boil 3 minutes, skimming off foam as it accumulates. Pour into jars. Invert jars for 10 minutes. Upright jars and store in a cool place. Serving suggestions: Great on crackers with cream cheese and the jelly as the topper.
Makes 7 half pints.
