Fantastic Fudge Squares


Happy Tuesday!  Ok… so I have been waiting a long time to post this recipe.  One of my all time favorite squares I have ever tasted.  These are a must try.  My mother -in-law makes these fudge squares better than any I have ever tasted.  On the weekend she made a double batch while we were at the water park.  When we got home, I wandered in the kitchen and was thrilled.  My face went into instant smile mode and you could not wipe it off if you tried.  These fudge squares are simply amazing!

If you have a craving for a sweet treat but not a lot of time to prepare…. try these – you will not be disappointed.

Ingredients

Squares

  • 1/2 Cup Margarine
  • 1 Cup Brown Sugar
  • 1 Egg
  • 1/2 Tsp. Salt
  • 1/2 Tsp. Vanilla
  • 1 Cup Flour
  • 1 Tsp. Baking Powder

Icing

  • 1/4 Cup Butter
  • 1/2 Cup Brown Sugar
  • 2 Tbsp. Milk
  • 3/4 Cup Icing Sugar

Method

  1. Preheat oven to 350 Degrees and grease pan.
  2. Cream margarine and sugar together in bowl; then add remaining ingredients in order.  Using a mixer, mix thoroughly and the spoon into 8 x8 pan.
  3. Spread evenly and bake for 30 minutes.
  4. Remove from oven and let cool.
  5. Slide a knife around the edge of the pan to pull the squares away from the pan.
  6. Once cool, melt butter and brown sugar.
  7. Cook 2 minutes, stirring.  Add milk and bring to a boil again.
  8. Remove from heat.  When cool add icing sugar.
  9. Spread on cool squares.

Zesty Tip: After taking the squares out of the oven, when they are slightly cooled run your knife around the edge which will allow the square to pull away from the sides.  This will make it easier and cleaner while you ice the squares and prevent crumbs from getting in the icing.

I am pretty sure everyone will love these squares.  Make sure you try them and let me know what you think.  I know you will be impressed.  These do look similar to butterscotch blondies but the flavor is quite different…. and the icing sugar is to die for!

    Yum! I think these are kind of a ‘Maritimes’ thing, I definitely remember eating them a lot when I lived in NB. They were always at bake sales and receptions and stuff. I’ve never come across anyone making them here in ON though, but I’ll be happy to start the tradition. :D These look FABULOUS, I can seriously taste that fudgy top just looking at your pictures.

    I am assuming that icing sugar is powdered sugar/confectioners sugar? They look so yummy, I’m planning on making them. Just wanted to make sure I understood correctly. Thanks!

    They look fantastic, but I’m so confused by the name. :)

    Fudge is something that’s made with sugar, butter, and cream of some kind and sometimes involves cooking to the soft-ball stage. (Real fudge needs to be cooked – but I do know of a couple of recipes for quick fudge that don’t).

    Fudge never contains flour and it’s definitely a textural thing.

    I would consider this to be very much a bar cookie or even possibly a brownie/blondie. But it’s not at all what I’d consider fudge in any form. :)

      It’s the top part that is the fudge part! It’s not exactly fudge, you’re right, but it’s definitely not plain icing. It does have butter and sugar and milk, and you do cook it, and then it ’sets’ on the cake-y part.

      So it’s definitely the closest thing you could get to a ‘fudge square’, I think. :) The cake part makes it a square, and the top part makes it fudge!

    Why are they called fudge squares? No chocolate, and they have flour, which fudge doesn’t not as stated by the previous comment. Also, what is icing sugar? Is that powdered or castor sugar? Superfine? Thanks, they look great no matter what they are called!

    wow, those look rich! but who doesn’t love butter and lots of brown sugar?! Yum! I also wanted to ask you about helping with my blog/website. I have a logo and idea but I’m am technically challenged. While my fiancee is good with computers, he’s pretty busy to make a new website for me. He’s started a template with Joomla, but I don’t have a clue to get it to do what I want. I would eventually like to have it as a business website, in addition to the blog, but that would be down the road. Any suggestions? Thanks!

    Thanks for the recipe, Zesty! I made these squares today and love them. The icing/frosting tastes just like fudge and reminds me of Penuche icing/frosting which is my Mom’s favourite. I’m holding on to this recipe because I will be making these again! Yum.

    I just tasted them, they are very good but unbelievably sweet (especially the frosting). I used wholewheat flour as I felt somewhat guilty using so much butter and sugar, and it turned out well.

    Just put a pan of Fudge Squares in oven..and was checking new recipes when I found yours,..Its exactly the same as mine…Was my mother-in-laws..that she made for years… They are so good and very easy..Maybe they are a “down east recipe” as I live in N.B.

    So what am I doing wrong??! I tried to make these last night – twice. Both times the cake seemed to rise perfectly and then over the last ten minutes of cooking the top cracked and the cake gradually collapsed in the middle! The outer edges are risen and crispy but there’s no cake in mine! They certainly taste fudgey but don’t look nearly as beautiful as your MIL’s.

    The baking powder’s new so I don’t think it’s that and I promise I didn’t open the oven during cooking. Any help gratefully appreciated!
