Hi ZestyCook readers! Thank you for taking the time to check out this guest post. My name is Beth and I’m from Cross Border Cravings. Alongside my Canadian friend Aaron, we explore food and fitness on both sides of the Canadian/American border. A big thanks to Zesty for having me today.

I’m going to show you how to make one of my favorite fish dishes, Fish in Tomatoes and Mint. This is a dish my dad often used to make when I was growing up because it combines all the qualities of a great weeknight dinner – fast, delicious and healthy.
Ingredients
- 2 pieces of a meaty fish, such as swordfish (what I used), blue marlin or grouper
- 1/4 yellow onion, chopped
- 1 clove of garlic, minced
- 1 can of skinned and chopped tomatoes
- a drizzle of olive oil
- salt and pepper to taste
- fresh mint leaves, chopped
Method
- Start by heating up the olive oil, onion and garlic in a medium skillet.
- After a few minutes, add the fish, salt and pepper.
- Cook the fish for a few minutes until lightly browned and flip.
- Add the can of tomatoes.
- ENJOY!
