Fish in Tomatoes and Mint

I’m going to show you how to make one of my favorite fish dishes, Fish in Tomatoes and Mint.  This is a dish my dad often used to make when I was growing up because it combines all the qualities of a great weeknight dinner – fast, delicious and healthy.

Ingredients

  • 2 pieces of a meaty fish, such as swordfish (what I used), blue marlin or grouper
  • 1/4 yellow onion, chopped
  • 1 clove of garlic, minced
  • 1 can of skinned and chopped tomatoes
  • a drizzle of olive oil
  • salt and pepper to taste
  • fresh mint leaves, chopped

Method

  1. Start by heating up the olive oil, onion and garlic in a medium skillet.
  2. After a few minutes, add the fish, salt and pepper.
  3. Cook the fish for a few minutes until lightly browned and flip.
  4. Add the can of tomatoes.
  5. ENJOY!
