1. Healthy Cobb Salads
2. Grilled eggplant topped with crushed tomatoes and fresh mozzarella
3. Grilled veggies with a balsamic reduction
4. Port mushrooms grilled and stuffed with artichoke hearts (buy canned), sundried tomatoes, and mozzarella.
5. Garbage salads- throwall the leftovers of a day into a bowl, top with dressing, and serve
6. Make your own fajitas. Grilled chicken, grilled peppers, fresh tomatoes, cheese, tortillas. served with corn on the cob.

Why is it that I always respond to these requests late? Oh, yeah, I'm busy and don't read it everyday. Oh well, here's an idea for you (if you have the ingredients handy): Use flour tortillas and peach or apricot preserves to make "fried pies."

Fill the flour tortillas half full with the preserves. Bend the tortilla over, and wet them around the edges with water. Using a fork, press the two sides of the tortilla together all the way around. Grill on both sides (or cook in lightly greased skilled) until brown and crispy.

We tried this when we were kids, and the tortillas wouldn't stick together. However, we had a blast eating the flat fried pies, and we created some great memories in the process. A friend who had experienced the fun years ago, wanted to try it again on a more recent camping trip. The use of water around the edges made our second attempt a success.

OMG...You have to BBQ some cookies or a cake. The smell will bring the entire campground to your site. You will be a star!!! We also like to BBQ pizza while camping. Have fun!
