Glazed Orange Hoisin Haddock

Happy Thursday! This week is flying by. It is hard to believe. So I was craving fish on my way home from work the other day so I stopped into the fish market to pick up some haddock. When I got back out into the car – the hamster was turning wondering what could I do with this haddock.

I didn’t want it breaded…. I didn’t want it poached… I wanted to keep it simple. I was STARVING. On the drive home I came up with this sauce as I knew I had all the ingredients to make it happen and it would take all of 15 minutes. This is my kind of recipe, so here goes.

Ingredients

  • 4 Haddock Fillets
  • 3 Tbsp Hoisin sauce
  • 1 Tsp chili paste
  • 1 large garlic clove, pressed
  • 1/3 Cup soy sauce
  • 1 Tbsp honey
  • 1 Tbsp ginger paste or minced fresh ginger
  • 1/4 Cup Orange Marmalade
  • Fresh Basil
  • Zest or Orange for Garnish

Method

As I started the sauce, the phone rang and I totally forgot to take pictures as I was making the sauce. So take my word for it, so simple… dump ingredient in the sauce pan, heat and stir.
  1. Add all ingredients except Haddock in a saucepan.
  2. Blend together and cook on low heat until heated through.
  3. Heat 1 tsp olive oil in a shallow non-stick frying pan, season the haddock and place in the pan
  4. Cook for 4 minutes over a high heat, until golden. Turn and cook same as other side.
  5. Pour the sauce over top and cook for 2 minutes.
  6. ENJOY!

Zesty Tip: When cooking with fish, the biggest tip I can share is too ensure the fish is fresh and do not over cook it. Once fish is cooked too long it becomes like shoe leather… not a good scene.
