Happy Thursday! This week is flying by. It is hard to believe. So I was craving fish on my way home from work the other day so I stopped into the fish market to pick up some haddock. When I got back out into the car – the hamster was turning wondering what could I do with this haddock.
I didn’t want it breaded…. I didn’t want it poached… I wanted to keep it simple. I was STARVING. On the drive home I came up with this sauce as I knew I had all the ingredients to make it happen and it would take all of 15 minutes. This is my kind of recipe, so here goes.
Ingredients
- 4 Haddock Fillets
- 3 Tbsp Hoisin sauce
- 1 Tsp chili paste
- 1 large garlic clove, pressed
- 1/3 Cup soy sauce
- 1 Tbsp honey
- 1 Tbsp ginger paste or minced fresh ginger
- 1/4 Cup Orange Marmalade
- Fresh Basil
- Zest or Orange for Garnish
Method
As I started the sauce, the phone rang and I totally forgot to take pictures as I was making the sauce. So take my word for it, so simple… dump ingredient in the sauce pan, heat and stir.- Add all ingredients except Haddock in a saucepan.
- Blend together and cook on low heat until heated through.
- Heat 1 tsp olive oil in a shallow non-stick frying pan, season the haddock and place in the pan
- Cook for 4 minutes over a high heat, until golden. Turn and cook same as other side.
- Pour the sauce over top and cook for 2 minutes.
- ENJOY!
Zesty Tip: When cooking with fish, the biggest tip I can share is too ensure the fish is fresh and do not over cook it. Once fish is cooked too long it becomes like shoe leather… not a good scene.
I hope everyone has a great day… Friday is approaching fast.
Take care
zesty

The sauce sounds sweet and tasty.
That does look good. It has all the 3 elements that I love, spicy, sweet and sour.
Of all the amazing things you have made…this is my favorite! I wish this was my dinner tonight!
I love that you created the sauce on your drive home. The “hamster” is a genius
As a recent convert to everything fish, this dish looks perfect!

Mmmmm, this has been bookmarked!! I had a haddock craving the other day and have yet to satisfy it. I think I just found my solution! Thanks
I’m not really a big fish fan, but I bet the sauce would be awesome on some pork chops. I’m totally stealing it.
I love using hoisin, so versatile. This looks good! Now I’m craving moo shi!
