Hummus, Kashi's and SOLD!

Thursday is here and I am so excited to write this post that I cannot type the words fast enough.  Our house has finally sold and now we are onto the building process.  Can you say overwhelming?  So the deal has been in the works for about 4 weeks and I kept the news quiet because well … I tend to have bad luck.  We had received a conditional offer on the house back in early April and we were excited to say the least.  Things went well including the building inspection, the buyers financing and all the conditions were removed.  As of yesterday, it is a DONE deal.

Zesty is pumped!!  I was so excited last night that I didn’t even make a real meal.  I am trying to organize the building of the new house with getting permits, meeting the architect, soil tests, not too mention packing/moving.  Oh do I dread packing.

I am calling all readers to send me packing tips in the comments or email me.  So without a “real” supper I decided to whip up a batch of hummus and go with some Kashi crackers (that I love).

Here is what I did for the hummus.

Ingredients

  • 1 15 oz can chickpeas drained
  • 2 cloves garlic minced
  • Juice of 1 lemon
  • ½ teaspoon sea salt
  • 2 tablespoons tahini
  • 2 Tablespoons virgin olive oil

Method

  1. Place all ingredients in your food processor with the S blade and puree to desired consistency.
  2. Add a little purified water to get a nice creamy consistency.
  3. Taste and adjust flavors to your liking.
  4. ENJOY!

Zesty Tip: For variety try adding ½ cup fresh parsley and ½ teaspoon cumin for a more Middle Eastern flavor.  This easy hummus recipe can be made even more nutritious by using sprouted chickpeas. Simply substitute 2 cups sprouted chickpeas for the canned ones.

If you can’t already tell, I am super excited about the house selling and finally moving on to the building process.  This summer will be very busy, crazy and hectic with work , the house and of course zestycook.com.  Never fear though, zesty will not lack in attention and/or quality.  I hope you have a great Thursday and of course I will see you Friday for some more fun and excitement.

Congrats on the sale!!!!!!!!!!!!!! I know how excited you must be – we just sold our house in February. mmmm hummus. Who needs a full meal when you have an awesome bowl of hummus ;)

Hmm, packing tips… I should have more (moved six times in the last four years of college) but all I can think of right now is make lists and plans so you have all the important stuff handy, and use plastic bags as padding in boxes and cloth bags to tote small things (handles = you can carry more). Congratulations and good luck!

Congratulations! My biggest tip is use the packing process to clean out things you don’t need. Every time we move, we downsize and it feels soooo good. Also, start early … it gives you more time to keep things organized.

My best suggestion (which we learned from experience): Tape your remote to the TV it goes with. We got all moved and couldn’t find the remotes.

I also recommend lots of beer and pizza!

YAY!!! Congrats on your new digs!

I wonder…how does the cost of making your own hummus compare to buying it? I have had the experience of something be more costly to buy than make. (It is more expensive to make a single pizza versus buying it, but if you make a couple – totally cheaper to make at home because you have already invested in ingredients) Of course, the joy of making it one’s self ads to the value. But I am just wondering if you have had to make a megabatch to be cost effective?

@snackhound – That is a very valid question. In certain cases I am with you on buying a certain item but sometimes it is nice to control exactly what goes in it and flavor it the way you like it. So in certain instances i look at cost as a secondary motive and make it from scratch. Very good question, I appreciate it

Congrats on the house…how exciting!
The Hummus sounds great- I made some for Mothers Day and added roasted peppers to half the recipe- it was a big hit. My favorite snack!

As far as packing tips…the biggest one I learned over the years- hire someone to do it. Sit back with a glass of wine and a tray of crackers and hummus and relax. Focus your energy on the new house!

Congratulations!! We just got done moving into a new house, and there is still so much more to do! It never ends and it’s so exhausting. I hate packing and moving and getting things situated again. We did a lot of painting already and are going to get started on our laminate flooring. Just have to take it one day at a time, especially with working and life all going on at the same time. I usually like to have everything organized, but this time we didn’t have much time so I just threw everything into random boxes and hoped for the best! Good luck with everything!

Congrats on seeling your house & getting to build your own dream home. Alas, I have no packing tips, because well, I’m not a seasoned mover. But should you come up with any in the next couple of months, let me know, because I’ll be moving out of my suite then!

Congrats on the great news! When I get super excited about things I tend to whip together random meals also, so don’t feel bad =) Although your random meals look stunning! I dread packing too. Even though I just had a dorm room to pack and haul home, there was ALOT of stuff in there! One tip I can give you, is I like using the GIANT zip loc bags. They work great clothes, linens, and even the haul food things. The ones I got have handles so carrying is a snap–plus they’re reusable, so you can store them and use them over again. Good luck!

Congrats on selling your house. I don’t know if you can get these where you are, but I bought recycled boxes from http://www.usedcardboardboxes.com. It made for a much more efficient move from Chicago to Pittsburgh.

First off…congrats! Progress is a great thing!

When I had to move, I found packing (and more importantly, unpacking) was made easier byfollowing this simple system:

lay out a bunch of boxes and have packing materials handy

label each box with a marker on all sides with either the room it is going to or the type of stuff going into it (clothes, books, etc)

fill’em up, tape ‘em up, carry ‘em out!

As for the hummus…love it! I can only eat it if I make it with dry beans. I like to add a couple handfuls of barley as it cooks. Not sure why I did it the first time, but the consistancy is awesome! Also, try roasting your garlic first….trust me you will love it

Congrats on the house!!!! My only packing tips are to take the time to sort things out and pack neatly. What you put in the box is what you will find when you open the box. Also, label all the boxes with as much detail as possilbe. I like to write the room where the box goes and the contents of the box. Good luck!

We close on our sale and purchase this weekend and it’s be PACK-CITY at our house. Regardless of the time constraints, I’ve insisted on being organized, so all boxes are numbered and there’s a master list of the box #’s and a general list of what’s inside. I also put a label on the box as to what room the box will go into in the new house.

Congratulations!!!!! (We weren’t brave enough to venture the building process ;-)
