My First Take at Chia Pudding

First off, It’s good to be back! I have been somewhat MIA as work has been extremely busy ( although I am not complaining) and I just wanted to tell you I have not stopped blogging –  just a short hiatus which has now ended.  I would like to welcome myself back with something way out of my comfort zone.

Chia Pudding…

with a kick…

or shall I say with chocolate and mint

Chocolate Mint Chia Pudding

How does that sound? Well it was super easy to make. Everyone in the house tried it and let’s say the results were mixed. Some twisted their heads and rolled their eyes pretty hard while others turned the thumbs up and went back for more.



  • 2/3 Cup Chia Seeds
  • 2 Cups Almond Milk
  • Pinch of salt
  • 1 Tbsp. Honey ( you can use Stevia)
  • 2 Tsp. Cocoa powder
  • 1 -2 Tsp. Vanilla
  • Fresh mint


  1. Combine all ingredients together in a large bowl.  Be sure to break down the cocoa powder and mix thoroughly
  2. Give it a quick taste for balance
  3. Store covered in fridge for 3-45 minutes to set up.
  4. ENJOY!

Zesty Tip:  Free wheel with this one.  You can mix any flavors you like into chia pudding.  Be creative and adjust as you go.
