Oh My… Basil Chicken

Happy Monday! What a weekend… full throttle. What did you think of the big game?

I have a recipe to share with you today that I am pretty positive will knock your socks off and make you tongue tingle. This recipe has been adopted from my many visits to a local Thai restaurant where they have a spicy basil chicken dish with steamed rice. Well let me tell you that this is super easy to pull off.  This dish takes no time to prepare yet the flavor and intensity are simply amazing.

Not often do I rage about a recipe like this one but you have to try it next time you are feeling chicken on the menu. You will not be disappointed.

Ingredients

  • 1 Tbsp. Peanut oil for stir-frying
  • 4 Cloves garlic, finely chopped
  • 1 Small Onion (Chopped finely) – optional
  • 2 Cups Chicken – coarsely chopped, or cut into small bite-size pieces
  • 2 Jalapeno peppers, cut into large slivers with seeds
  • 2-3 Tsp. Soy sauce
  • 2 Tbsp. fish sauce
  • 1 Cup fresh sweet basil
  • Black Pepper

Method

  1. Prepare the ingredients as instructed. Leave the fresh basil leaves whole.
  2. Heat a wok until its surface is smoking hot. Swirl in the oil to coat the wok surface.
  3. Wait a few seconds for the oil to heat, then stir in the garlic, followed a few seconds later with the onion.
  4. Stir another 15 to 20 seconds before adding the chicken.
  5. Stir-fry 1 to 2 minutes, or until most of the chicken has changed color on the outside and is no longer pink.
  6. Toss in the chillies. Sprinkle black soy sauce over the mixture and stir-fry for another 15 to 20 seconds.
  7. Season to taste with fish sauce, then stir in the fresh basil. Toss well.
  8. Stir-fry another 1/2 to 1 minute, or until the basil is wilted and the chicken cooked through.
  9. Sprinkle with pepper.
  10. Stir and transfer to a serving dish, or spoon directly over individual plates of plain steamed rice.
  11. ENJOY!

Zesty Tip: When making stir fry, and using meat I try to cut the meat as small as possible. In this case, the smaller the chicken is cut, the greater the surface area to coat with the flavors of the aromatic herbs and sauces, and the more flavorful the stir-fry will be.

The Basil Chicken looks wonderful. We didn’t watch the game here in Mexico. The Sky cable system had a channel with the game statistics & the voices of the announcers on it. Even if I had wanted to watch a few commercials & the halftime show it would have been impossible.

My favourite season…hmmm. Well, I like winter because it’s skating season, I like summer because my birthday is in the summer, and fall is nice because the leaves are all changing colours and it’s not too hot out. I can do without spring.

I was sooo looking forward to trying this recipe but can you believe my supermarket didn’t have any of the fresh basil on hand when I went?! Just my luck! They usually do though so maybe this will be on next week’s menu for me. I ended up having pesto instead to cure my craving. ;)

Hey, fish sauce can be replaced by oyster sauce. Oyster sauce tastes yummy and get along well with the soy sauce.Thanks for the recipe, i am hungry now! :)
