Happy Friday everyone! Another week is almost over… crazy isn’t it. I thought I would share with you a simple muffin that you can make when you need something sweet in a hurry. I made these a few weeks ago and they are actually pretty tasty.
These muffins are very flexible. You can mix it up by switching the nuts to pecans as well as adding some of your favorite dried fruit in them as well. Dates would also work really well. This one is super easy and a great Sunday morning treat for the house to wake up too.
Ingredients
BOWL #1:
- 1 1/2 Cups flour
- 1/2 Cup sugar
- 2 Tsp. baking powder
- 1/2 Tsp. salt
- 1/4 Cup shortening
- 1 egg (well beaten)
- 1/2 Cup milk
BOWL #2:
- 1/4 Cup brown sugar
- 1/4 Cup walnuts, chopped
- 1 Tbsp. flour
- 1 Tsp. cinnamon
- 1 Tbsp. butter, melted
Method
- Sift flour, sugar, baking powder and salt in bowl.
- Cut in shortening until mixture resembles crumbs.
- Mix egg and milk together, add all at once.
- Stir just until moistened.
- Combine brown sugar, nuts, flour, cinnamon and melted butter.
- Place 1/2 batter in greased muffin tins or liners (I opted for liners).
- Sprinkle nut mixture over 1/2 batter, then top with remaining batter. (I save a little nut mixture to sprinkle on top too.)
- Bake at 350 degrees for 20 minutes. Makes 12 muffins.
Zesty Tip: When baking any cake like batter – always keep an eye on the cooking process but try not to open the oven door during the allotted time. If you feel you oven may be too hot – reduce the baking time by 2 minutes and be sure to check the batter with a toothpick to see if it comes out clean. If it does, you are good to go.

Yum, I love coffee cake and muffins, so these sound great! I’d have to say my own pumpkin spice muffiny cupcakes are my current fave.

I wish I had some of these to go with my coffee right now. I am going to surprise you here….my favorite muffin is not pumpkin…it is actually any coffee cake muffin.
Your muffins look geat! Sad, but true – pumpkin is my favorite too. So moist and scrumptious. My mom stopped by this week and brought me some great cranberry muffins made with applesauce that she made.

My favorite muffin happens to be coffee cake! I have a sour cream coffee cake muffin that is just devastating. Not as simple as this one though, heh.

Lemon Cranberry! Always lemon cranberry – it’s the BEST combo ever. The bakery at one of the grocery stores here makes excellent lemon cranberry ones with poppy seeds and pumpkin seeds. I think they make a vegan version of the same muffin as well. Now I feel like I might have to pick one up on the way home!

Yes, these are very quick. There are some mornings where I do not want to cook, but really do, so a quick muffin is best.
Favorite? I made a spicy pecan muffin with crumb topping that was really a flavor explosion.

Well, these look wonderful! I have two favorite kinds of muffins: (1) Banana chocolate chip – I used to get these giant muffins at my college and they were excellent; and (2) Bran muffins – I know it’s plain, but I love ‘em.
These are perfect. I have been wanting to find a good coffeecake muffin.
A pretty basic recipe that can be adjusted to any taste. I like the flexibility to use things you happen to have in your pantry.
