Simply Roasted

You know sometimes the simple things in life really make you smile.

- Watching your garden flourish… makes me smile.

 - Cooking with fresh vegetables from your garden as opposed to not… makes me smile.

- Tasting homemade food made by you… makes me smile.

- Asking your son who is 7 to follow a set of instructions and he looks at you and says “Dad, I know how to do it!  Did you think I was born yesterday?”…. makes me smile.

This dish… makes me smile.

Roasted carrots and parsnip, hit with some fresh pepper and salt, a dash of olive oil and roasted for 60 minutes at 375 – tough to beat.  When you haul it out of the oven and hot with with some fresh lemon juice to wake it up.  You will have one happy tongue.

Simple.

Easy.

Tasty.

My way to cook.  Friday is upon us and this week flew by.  Nothing special in store for the weekend that I am aware of – but that could change.  The weather has been phenomenal so here is hoping that it continues.  Have a super day and a great weekend.  Talk on Monday

I tried this tonight and it did not come out very well. I am going to play with the pan size and oil to veggie ratio (my veggies were dry).
