Spinach Tomato Macaroni

Happy Friday!  I like to call this the 10 minute pasta with a twist.  We all need these types of meals sometimes – especially this week for me.  When you are in a rush as it sometimes happens… eating healthy is tough.  To help out in the process of preparing healthy meals, you need to have some quick meal ideas that can ease the stress, and sometimes dread, of cooking dinner.

I created this meal out of scraps (as I call them) in the fridge.  The scraps used for this meal were left over spinach and feta cheese.  I always like to have some homemade tomato sauce in the freezer on hand as a quick and easy sauce in a pinch.

Next time you need a meal in 10 minutes give this a try.

Ingredients

  • Macaroni
  • Tomato Sauce
  • Spinach
  • Feta Cheese

Method

  1. Cook pasta according to directions.
  2. Warm sauce in microwave until heated.
  3. Drain pasta, once cooked.
  4. Toss pasta with sauce.
  5. Add generous portion of uncooked spinach to bowl.
  6. Cover with macaroni.
  7. Top with cheese.
  8. ENJOY!

Zesty Tip: To freeze tomato sauce and or stocks – try saving them in ice cubes trays or ice cube bags for simple access and great if you only want to thaw out a little bit at a time.

That is it!  A zesty meal with a decent balance of Nutrition in 10 minutes.  Have a great weekend and I will see you on Monday.

I always keep homemade tomato sauce in the freezer! I love how you used what you had in the fridge and came up with something so simple that looks so delicious!

Looks delish! I do a huge canning of salsa and pasta sauce (or base sauce as I like to call it!). Although you would think I would remember how quickly it goes!

I think I canned 20 pints of salsa and 40 pints of base sauce, and I am already out.

I used to grow tomatoes until I realized that my local grocery store at the end of the season sells them for .19 cents a pound in big bushels. That sold me!

I just left myself a reminder on my computer – BUY MORE TOMATOES!

I love how you kept the spinach uncooked for this recipe! I usually cook it and add it, but this looks fresh and great.
