Strawberry Chocolate Waffles

What do you get for being lazy?

What do you get for having nothing prepared for dinner?

What do you get when you have frozen Eggo waffles in the freezer and some fresh strawberries?

You get a little concoction I call – Dessert waffles for dinner!

A waffle topped with a smear of nutella, a dollop of Greek yogurt, sliced strawberries, slivered almonds and maple syrup.   Was it good?  I would have to say it was delicious.  Was it a great dinner?  Umm No

But that is life.

What are some of the crazy things you eat for dinner that are definitely out of the ordinary?  Let me know.

I actually just had fried Spam for dinner because I was too lazy to thaw out and cook real meat! But, I also made a side salad with fresh Chinese lettuce, cubed avocado, cherry tomatoes, and a home made vinaigrette. And, I threw together a quick pasta with some butter and shredded cheese, so it wasn’t too unhealthy.

We do something similar, but we call them cake waffles. We mix up Betty Crocker’s Cherry Chip Cake Mix according to the package directions (any will do but cherry chip tastes the best) and cook them in the waffle iron. We then whip up fresh whipping cream (I don’t believe in Cool Whip) and put on top instead of sugar. My kids love it when we have this for dinner.

i eat a lot of crazy things for dinner but rarely veer from traditional breakfasts…today, however, i ate a veggie burger salad at 10am?!?

those waffles look amazing. but something we have done different is switch dinner for breakfast and breakfast for dinner. but one night…we opted out for fruit and a salad. that was all each of my family members wanted. so…i fixed a huge fruit salad and a regular garden salad. it was great.

I have soup for dinner 365 days a year…
But I ocassionally have an odd breakfast – salad. Lettuce tomato onion cucumber sometimes an orange on top with vinaigrette
