Super Simple Waffles with Raspberry Sauce

I love Breakfast.

I really do.

Do you like warm waffles with fresh maple syrup topped with a berry treat?

I had found some raspberries on sale at the super market and decided that I wanted to use them up for a breakfast dish.  Normally I would just wash them and shove them in my mouth or in some oatmeal/cereal/yogurt then call it a snack.  But this time I decided to haul out the waffle maker and kick it up a notch.

Can anyone really turn down a fresh waffle? I don’t think so… especially now that you can customize your waffles depending on your needs and wants ( gluten or gluten free etc.)

Waffles

Ingredients

  • 2 Eggs
  • 2 Cups flour
  • 1/2 Cup butter
  • 1 3/4 Cups milk
  • 1 Tbsp. sugar
  • 4 Tsp. baking powder
  • 1/4 Tsp. salt

Method

  1. Heat the waffle maker.
  2. Beat the eggs with a hand beater in a medium bowl until light and fluffy.
  3. Beat in remaining waffle recipe ingredients, just until smooth (try not to over beat).
  4. Pour batter from a cup or pitcher onto the center of the waffle maker.
  5. Bake about 5 minutes or until the waffle maker stops steaming.
  6. ENJOY!

Raspberry Sauce

Ingredients

  • 1 Cup  fresh or frozen, thawed strawberries or raspberries
  • 1 Cup red berry preserves
  • 1 Tbsp. sugar
  • 1 Tbsp. fresh lemon juice

Method

    1. Place all ingredients in sauce pan on medium heat.
    2. Cook until until warmed through and sugar is dissolved, about 3 minutes.
    3. Store any leftovers in an airtight container in refrigerator.

Zesty Tip: For a richer and more flavorful waffle you can add a little bacon fat into the batter.  It will give you that breakfast flavor that people cannot get enough of.

Question… if you wanted to make them whole wheat waffles, could you replace some flour with whole wheat flour… or doesn’t it work that way? Either way… they look delicious!! :)

@Kristin — Yes you can – just be conscience of the texture and weight of the waffle may change ( ie: more dense )

Since I don’t have a waffle maker, I’m thinking that the berries and sauce would go just as well on pancakes. Love your hint about bacon grease. BTW, you’re such a darling to invite your blog makeover people to “bare” with you :)
