<p>Today I wanted to create something a little different and of course use one of my favorite kitchen products &#8211; <a title="Swissmar Slicer" href="http://zestycook.theopenskyproject.com/swissmar-borner-v-slicer-plus-mandoline.html" target="_blank">my swissmar slicer</a>.  If you have never tried this slicer &#8211; it is a must have in your kitchen.  You can pick one up at <a title="Swissmar Slicer" href="http://zestycook.theopenskyproject.com/swissmar-borner-v-slicer-plus-mandoline.html" target="_blank">Opensky</a> today.  Parsnips have a very unique flavor but there is something about them &#8211; that I just love.  For this recipe I thought I would kick them up and add a little <strong>cinnamon </strong>and <strong>honey</strong>.  They turned out almost candy like but were very yummy.</p>
<p>Let&#8217;s just say I probably should have peeled a few more parsnips into the mix but it was all I had left.  This is great for an appetizer or even a side dish with a nice piece of fish.</p>
<h3>Ingredients</h3>
<ul>
<li>1 Large Parsnip</li>
<li>1 Tbsp. Honey</li>
<li>1 Tsp. Cinnamon</li>
<li>1 Tbsp. Olive Oil</li>
<li>Ground pepper</li>
</ul>
<h3>Method</h3>
<ol>
<li>Preheat oven to 400 degrees and peel the parsnip</li>

<li>Using your <a title="Swissmar Slicer" href="http://zestycook.theopenskyproject.com/swissmar-borner-v-slicer-plus-mandoline.html" target="_blank">slicer</a>, slice the parsnip into discs.</li>
<li>In a large bowl toss the parsnips slices with olive oil, pepper, cinnamon and honey</li>

<li>Arrange on a pre lined baking sheet and bake for about 25-30 minutes</li>

<li>Remove when golden brown</li>

<p><em><strong>Zesty Tip: </strong> Be careful not to burn this little chips.  Because of the high sugar content they will burn if left unattended.  I like to move them to the top rack after the first 15 minutes and turning once.  This will allow them to dry out and crisp up without burning.</em></p>

<p>It is baking night at Zesty&#8217;s! Nothing fancy but I thought I would share with you a <strong>family favorite </strong>for a quick yet satisfying dessert. I sometimes add nuts but they are not a huge hit at our house so I left them out for this one.</p>

<h3>Ingredients</h3>
<ul>
<li>1/2 cup butter</li>
<li>3 oz. unsweetened baking chocolate</li>
<li>1 oz. semi-sweet baking chocolate</li>
<li>1 1/4 cups sugar</li>
<li>1 teaspoon vanilla</li>
<li>3 eggs</li>
<li>1 1/4 cups flour</li>
<li>1/4 teaspoon salt</li>
</ul>
<p>	<b>Topping</b></p>
<ul>
<li>Chocolate Sauce (for topping)</li>
<li>Cherries</li>
<li>Ice Cream</li>
</ul>
<h3>Method</h3>
<ol>
<li>Grease bottom of an 8 inch square baking pan.</li>
<li>Melt both chocolates with butter in a medium saucepan stirring over low heat until smooth (about 5 minutes). Remove from heat.</li>
<li>Stir in sugar. Add eggs, one at a time, mixing well after each addition. Mix in flour, salt, vanilla,  stirring only until mixture is smooth and ingredients are combined. Once flour has been added, do not overmix to prevent toughening.</li>
<li>Spread mixture into prepared pan.</li>
<li>Bake for 25 to 35 minutes or until brownies begin to shrink from sides of pan.</li>
<li>Allow to cool before cutting into squares.</li>
</ol>
<p>Note: if your brownies are dry or tend to be overbaked consistently, reduce the temperature of your oven by 25 degrees.<br />
Recipe can be doubled by baking twice the amount of all ingredients in a 13X9 inch pan. Bake for 35 to 40 minutes.</p>

<address>As you read this headline, you may say to yourself &#8211; &#8220;who does this Zestycook guy think he really is&#8221;? Well don&#8217;t&#8230;.. I just created that headline to get your attention and now that you are reading this I will inform you that this is just my opinion on how to make the <strong>perfect</strong> nachos.</address>

<p>Nachos are a fun <strong>appetizer</strong>, or a perfect first course for a Mexica-themed party or like at our house &#8211; the main course! Nachos are easy to <strong>customize</strong> with a variety of toppings.</p>
<p>These chicken nachos are <strong>absolutely</strong> delicious &#8211; don&#8217;t count on having any leftovers!</p>
<p>Really, there are three serious ingredients to consider when creating the perfect plate of nachos and those are <strong>chips, cheese, </strong>and the <strong>toppings</strong>.</p>
<h3>The Chips</h3>
<p>I prefer to go with the <strong>white corn tortillia</strong> and I often get the triangle shaped chips because there is more surface area for the cheese and toppings.  Some thing to consider when choosing your chips are the level of salt and the thickness of the chip.  You do not want the chip too <strong>salty</strong> that you cannot taste all the other ingredients and have it over power your experience.  As for the thickness, you don&#8217;t want the chip to thin where it gets all soggy&#8230;. that is a shame!  And also you do not want the opposite where it is so very thick that all you have are dry chips.</p>
<h3>The Cheese</h3>
<p>I like to get a high end cheddar, monterey jack or pepper jack cheese and shred it myself with the coarse grater.  Some of the <strong>pre packaged cheese</strong> is often grated too thin.  I also found that buying the cheap no name brand cheeses &#8211; they are alot greasier than the others so for that reason I steer clear of the no name cheeses for my nachos.</p>
<h3>The Toppings</h3>
<p>I am pretty sure I vary slightly from the average nacho guru.  I prefer chicken on my nachos as you can tell by the title.  To <strong>prepare</strong> the chicken, you can use left over chicken breast, thighs, or use boneless skinless ( really whatever you have on hand &#8211; but i like to use white meat again just for the moisture content). I like to also use a combination of jalepeno peppers or chilies, green peppers and red onion and then once out of the oven top with <strong>fresh</strong> tomatoes.</p>
<p>As you can see, moisture content for me is huge when making nachos.  The last thing you want is a soggy nahco without any <strong>CRUNCH!</strong> Next time you are craving nachos, try this technique.</p>
<h3>Ingredients</h3>
<ul>
<li>2 cooked boneless, skinless chicken breasts</li>
<li>2 tablespoons taco or burrito seasoning</li>
<li>2 tablespoons water</li>
<li>2 tablespoons mild or hot salsa</li>
<li>3/4 cup sour cream</li>
<li>1 small can/jar chopped green chiles (hot), drained</li>
<li>1/4 cup green onion, thinly sliced</li>
<li>1/4 cup of chopped green peppers</li>
<li>1/4 cup of chopped red onion</li>
<li>1 bag white corn tortilla chips</li>
<li>1 1/2 cups shredded Monterey Jack or Pepper Jack or Cheddar cheese</li>
<li>1/2 cup tomato, seeded and chopped</li>
<li>bowls of salsa, sour cream, and guacamole for dipping</li>
</ul>

<li>Chop chicken into bite-sized pieces. In a medium saucepan, combine chicken, taco seasoning, water, and salsa over mdium heat. Cook mixture until chicken is heated through and sauce is well-blended.</li>
<li>Remove mixture from heat and allow to cool to room temperature. Often times I do this ahead of time just to be ready.</li>
<li>To cook the nachos, I use a pizza stone and I usually preheat the stone for about 15 minutes on 400 degrees.  Then I take out the pizza stone with an oven mitt ( cause it will be hot&#8230; ) and start to place the nachos on the stone.  I try and get the nachos close together but not overlap them.  Once placed on the stone, I sprinkle a little cheese over the chips and then place the chicken mixture on( making sure not to place an extra liquid on the chips ).  After the chicken, I go with the peppers, chilies, and onions spreading a liberal amount over the chips.  Once complete I add the cheese.  Another tip I try to follow is not to make the chips disappear with the cheese ( I spread a nice amount but don&#8217;t over do it ). If your having  a large crowd I tend to make multiple batches because I don&#8217;t like to layer the chips due to the soggy possibility.</li>
<li>I then bake them on the middle rack at 400 degrees until cheese is melted through and the chips start to crisp around the edges.  I then top with tomatoes, and green onions and serve with salsa, sour cream and guacamole.</li>

<p>Growing up as a child, my mom used to prepare a tuna casserole that was one of my favorites to see at the dinner table. Chunky white tuna, crunchy green peas, a rich cream sauce and my favorite, fresh regular potato chips. Sounds a little strange I know but when you try it you&#8217;ll know what I mean. The texture combined with the flavors make this classic a must have in the family cookbook.</p>
<h3>Ingredients:</h3>
<ul>
<li>1 Can Mushroom Soup</li>
<li>1/2 cup of Milk</li>
<li>1 8 oz Can of Chunk White Tuna</li>
<li>1 Cup Crushed Potato Chips</li>
<li>1 Cup of Peas</li>
</ul>

<h3>Instructions:</h3>
<p>Heat oven to 350 Degrees.  Mix above ingredients in greased casserole in the order listed. Top with 1/4 cup of crushed Potatoe Chips.  Bake 25-30 minutes.</p>
<p>As you can tell by the simplistic recipe and ingredients, this tuna casserole is very economical and can easily feed a crowd. This is a great potluck dish or can even be used in a pinch when you are at the end of your grocery cycle.</p>
<h3>A couple of tips:</h3>
<ul>
<li>I find frozen peas work best unless you have access to garden peas(stay away from canned peas)</li>
<li>For the potato chips, I like to use ruffles (something thick for more texture)</li>
<li> A great addition to this recipe is a short pasta of your choice. (i tend to use macaroni, penne, rotini or fusilli)</li>
</ul>
<h3>Drink recommendation:</h3>
<p>To top of this classic, a large glass of milk is a great companion.</p>
