<p>This time of year one may loosen their belt a little and indulge, right?  For me, I am not sure I loosen my belt &#8211; I might just push the pants down a little lower to sit under the belly&#8230; but that may be too much info.  Regardless I wanted to share with you a few awesome recipes from some blogger friends that will make your mouth water.  I have been reading each of these blogs for a while and needless to say I am impressed with their work, their food and of course their photography.</p>

<p>You know my fascination with brownies right?  Remember when I came out with a statement a while ago with a post that boasted a <a href="http://zestycook.com/the-brownie-that-will-change-your-life/">brownie that would change your life</a>?  Those brownies are pretty yummy to say the least.  But today I have another story to tell you about.  Saturday morning I was lying on the couch watching the food network when <strong>Anna Olson </strong>came on and started making an outdoor picnic lunch.  On the menu was a triple chocolate brownie.</p>

<p>My ears perked up and I watched closely for the steps and tricks to make these super moist.  The key with brownies is that they can be dry if you are not careful.  There is no fear about these brownies getting dried out.  They are super moist and the one really astonishing fact about these brownies is the lack of flour.</p>
<p>Check below and let me know what you think.</p>
<h3>Ingredients</h3>
<ul>
<li>10 Oz. bittersweet or semisweet chocolate, chopped</li>
<li>2/3 Cup unsalted butter</li>
<li>3/4 Cup sugar</li>
<li>1 Tsp vanilla extract</li>
<li>3 large eggs</li>
<li>1/2 Cup all-purpose flour</li>
<li>1/2 Tsp salt</li>
<li>3 Oz white chocolate chips or chunks</li>
<li>3 Oz milk chocolate chunks</li>
</ul>
<h3>Method</h3>
<ol>
<li>Preheat oven to 325 F and grease and line an 8-inch pan with parchment paper.</li>
<li>In a bowl resting over a pot of barely simmering water, melt chocolate and butter, stirring gently. Remove from heat and stir in sugar and vanilla.</li>
<li>Stir in eggs, one at a time. Stir in flour and salt. Fold in white and milk chocolate chips.</li>
<li>Bake for 35 to 40 minutes, until a tester inserted in the center of the brownies comes out clean.</li>
<li>Cool before slicing.</li>
<li>ENJOY!</li>
</ol>
<p><em><strong>Zesty Tip: </strong> Chill these and top them with a dollop of ice cream to make brownie ice cream sandwiches.  These will make you really happy any time of the day&#8230; trust me I tried it.</em></p>

<p>A few weeks back I got a call from a <strong>Zesty in Law </strong>stating that they were getting a brick oven built in their backyard and I was asked if I would like to <strong>photograph </strong>the build and feature it on zesty.  Of course my answer was yes as I thought you would love to see it from start to finish. The goal being to see it at the finished stage and taste the <strong>food from the oven</strong>.  That happened last Friday and we will get to that in a little bit.</p>

<h3>What is a Brick Oven</h3>
<p>Now some of you may ask what is a brick oven so I thought I would share a little insight.</p>

A fire is burned in the oven for a  few hours, the coals are raked out, the oven floor brushed or swabbed  with a damp mop and then the food is cooked using the heat stored in the  oven mass. Wood-fired bakeovens are used to bake crusty bread, crisp  pizza and just about anything else including the Christmas turkey. The  oven can have a barrel/vault shape or it can be round. The inner  workings of the oven can be of modern firebrick material or simply made  of clay like the early settlers used. Plan your oven location, if you  can, so it can be used in any weather.</em></span></p>
<p>OK.  Everyone is on the same page on the <strong>&#8220;What is a Brick Oven&#8221;</strong> so now let&#8217;s get to <strong>&#8220;How to Build a Brick Oven&#8221;</strong>.  For this next phase I am going to show you a bunch of pictures with very little narrative as I think the pictures will explain themselves.</p>

<h3>Pizza Pizza</h3>
<p>Oh my God or OMG or whatever you want to say when you are super excited and you cannot get enough of something.  This <strong>pizza </strong>was absolutely insane.  For the night, I was <strong>sous chef  Zesty</strong> as I was helping with the prep and layout of the <strong>pizza</strong>.  Also was called upon every now and again to give the pizza a turn in the oven, slice it after completion and call over the troops.</p>
<p>For cooking pizza, the oven was around <strong>850-900 degrees F</strong> and the pizzas would literally cook in 2-3 minutes.  It was the first night of pizza cooking so there will be a few tweaks put in place to master the dough levels but overall the crowd loved it.</p>
<p>First off, you have to start the fire and get the oven up to temperature.  Then using a brush, reach in and clean the floor in preparation of the <strong>pizza </strong>dough.</p>

<p>Zesty in law and myself cooked <strong>11 pizzas</strong> including a couple of <strong>dessert pizzas </strong>that may knock your socks off.  We will get to those in a minute.  First up we have a basic pizza with homemade tomato sauce, some Genoa salami and cheese ( It was for the kiddos but I may have snuck a piece )</p>

<p>On to the Dessert Pizza.  How does <strong>strawberries</strong>, <strong>raspberries</strong>, <strong>chocolate</strong>, <strong>vanilla sugar </strong>and<strong> fresh dough</strong> baked at 800 degrees sound for dessert?  Pretty damn good right?  Well if you said <strong>&#8220;Holy Yum&#8221;</strong> you would be bang on.  These were <strong>amazing</strong>!</p>

<p>We capped the night off with a <strong>Simple Smore</strong> done in the oven.  I took a marshmallow, sliced a hole in the center and shoved in some chocolate, then roasted it in the oven and placed it between two graham wafers.</p>

<p>Remember back a while ago, I made these gorgeous <strong>squares </strong>that literally knocked you over with excitement?  Well If you don&#8217;t remember I will remind you&#8230; I DID.  No I didn&#8217;t dream up the recipe but I did pretty much eat the whole pan.  I had a huge craving for these <strong>little packs of sugar</strong> again so I thought I would share them with all the new readers that have never seen BUTTERSCOTCH BLONDIES.</p>

<p>I have been dying to make these Butterscotch Blondies for a while now.  I have had a few requests and have seen them around the <strong>food blogs</strong> everywhere so I decided to take the plunge.</p>

<p>The result? Very successful!  I chose the <strong>recipe </strong>from one of my favorite food blogs &#8211; <strong><a title="Smitten Kitchen" href="http://smittenkitchen.com/2006/11/blondies-for-a-blondie/" target="_blank">smitten kitchen</a></strong>.  They seemed so easy  &#8211; I was actually surprised just how easy they actually were.</p>
<p>Here is the lowdown on how to make &#8216;em.</p>
<h3>Ingredients</h3>

<li>1/2 Cup butter (melted)</li>
<li>1 Cup brown sugar</li>
<li>1 egg</li>
<li>1 Tsp. vanilla</li>
<li>3/4 Cup butterscotch chips</li>
<li>Pinch salt</li>
<li>1 Cup all-purpose flour</li>

I&#8217;m Jessica and blog over at <a title="How Sweet It Is" href="http://www.howsweeteats.com" target="_blank">How Sweet It is</a>,  which is a blend of my passion for <strong>food </strong>and <strong>fitness</strong>. Quick, easy and  economical meals are a must in our house since my husband and I both  work full time jobs. The last thing we want to do in the evening is  slave over a hot stove for hours. I also have a slight shoe obsession  and prefer to spend my hard-earned money on <strong>fancy footwear</strong>. Below is one  of the go-to meals we eat and enjoy every week!</p>
<p>We have a bit of a quesadilla obsession in our house. Luckily for us, they are easy and quick to put together, as well as economical!</p>
<p>Any given week we have one or two different versions of <strong>quesadillas</strong>. It is pertinent to switch things up so my taste buds and I don’t get bored. Most of the quesadillas contain some form of meat so Mr. How Sweet doesn’t throw a temper tantrum. But they don’t <em>need</em> the meat. Some of my favorites contain just <strong>fruit and cheese</strong>!</p>

<p>Not only are they simple and quick, they are easy to make healthy. Use whole wheat tortillas, low-fat cheese, lean meats, fruit and <strong>veggies</strong>. It doesn’t get much better than that!</p>
<p>The <strong>BBQ chicken quesadilla</strong> is probably my favorite variety. It is a nice compromise for Mr. How Sweet and me – he gets chicken, and I get sweet onions and oooey, gooey cheese. If you want to simplify things further, you can leave out the caramelized onions and use whatever cheese you please. Same goes for any quesadilla you may come across. Include ingredients you may not normally use – make it fun and make it yours.</p>
<p>Here is how simple the quesadillas are to make: all you need is a skillet and your ingredients. Heat the skillet on medium heat, throw the ingredients inside, fold the tortilla in half and let it warm through. If you don’t have a stove, you can simply use the microwave. See? Quick and painless.</p>
<p><strong>Zesty  Tip</strong>: Add a bit of cheese to BOTH sides of the quesadilla to act as “glue” and hold your ingredients in place.</p>

<p>Happy Monday and welcome to a new week!  I was unsure what to share with you today because I have so much in the hopper and ready to go and there is so much going on in the coming weeks.  As you know from last week, September 1st marks the start of <a title="Help the Students" href="http://zestycook.com/super-7-minute-frosting/" target="_self">HELP THE STUDENTS event </a>and I cannot wait.  It will be a one month series, featuring <strong>simple</strong>, quick meals that anyone can prepare with simple <strong>everyday ingredients</strong>.  They will also focus on being cost effective as well as packing lots o&#8217; flavor.</p>
<p>Before we get into today&#8217;s recipe which I pretty much love &#8211; I want to share some feedback I have heard over the blog in the last few months both <strong>positive </strong>and <strong>negative</strong>.  The positive feedback just reassures me that I am doing something I love and will continue to do.  The negative feedback is what I really love.  Sound bizarre?  Not really.  I find the negative information drives me to deliver a better blog, add more value for you the reader and an <strong>enhanced experience</strong> for all to enjoy.</p>

<h3>On to the Food</h3>
<p>Ever need an idea oh how to use up a fresh summer pineapple in a different way?  I know myself I have the hamsters moving in my head all the time to come up with innovative ideas to use fruit in the summer to impress both my palette and yours.</p>
<p>Most recently I had a <strong>gorgeous fresh pineapple</strong> from the farmers market and I knew I wanted to grill it.  By grilling fruit, the sugars inside <strong>caramelize </strong>so well and give you that sweet warm texture as you bite into them.  For this quick recipe all you need are a few ingredients and about 10 minutes to whip it up.  I have tried this twice now, so far and it has been a hit each time.</p>
<h3>Ingredients</h3>
<ul>
<li>1 Whole Pineapple ( sliced and cored)</li>
<li>Vanilla Ice cream</li>
<li>Pink Peppercorns (optional)</li>
<li>1 Tbsp. Butter</li>
<li>1 Tbsp. Brown sugar</li>
<li>Orange zest</li>
</ul>
<h3>Method</h3>
<ol>
<li>In a bowl add butter and brown sugar and microwave for 30 seconds.</li>
<li>Preheat grill to medium heat</li>
<li>Coat the pineapple in the borwn sugar butter glaze and place on grill.  Stay close as it will cook quickly and you do not want it to burn</li>
<li>Once golden brown, remove from heat and top with Vanilla ice cream, a few pink peppercorns for a bite and some fresh orange zest.</li>
<li>ENJOY!</li>

<p><em><strong>Zesty Tip:</strong> For a little crunch, try adding some toasted walnuts, peanuts or even pecans to elevate the flavor and texture combination even more.</em></p>

<p>Hollar!  How goes your Wednesday?  Mine seems to be trucking along as well as it could for a work week hump day.  As I thought last night what I could share with you today &#8211; it took me all of 30 seconds as I knew I wanted to share this <strong>fabulous frosting recipe</strong>.  Super easy, very <strong>quick </strong>and oh my god &#8211; so <strong>good</strong>!</p>
<p>Ideally this is meant for cakes, cupcakes or dessert like <strong>recipes </strong>but I am pretty sure you could rub this on your old car bumper and it would be just fine!  You have to try this for your next baking expedition.  It is an old classic and very similar to my &#8220;famous&#8221; ( in my own mind) <a title="Boiled Icing" href="http://zestycook.com/how-to-make-boiled-icing/" target="_self">How to make boiled icing post</a> but with a slight variation.</p>

<h3>Ingredients</h3>
<ul>
<li>1 Cup White Sugar</li>
<li>1/3 Cup Water</li>
<li>1/4 Tsp. Cream of tarter</li>
<li>1/8 Tsp. Salt</li>
<li>2 Unbeaten egg whites</li>
<li>1 Tsp. Vanilla</li>
</ul>
<h3>Method</h3>
<ol>
<li>Combine the first 4 ingredients in a saucepan and bring to a gentle boil, stirring until sugar dissolves.</li>
<li>Very slowly add the above sugar mixture to the unbeaten egg whites in a mixing bowl, beating constantly with an electric mixer until peaks form.</li>
<li>Beat in vanilla during the peak forming process.</li>
<li>Once stiff set aside and prepare to ice whatever you like.</li>

<p>Remember back to my <a title="BBQ Turkey w/ Blueberry Sauce" href="http://zestycook.com/grilled-turkey-breast-w-blueberry-sauce-and-a-parade/" target="_self">Turkey and Blueberry post</a> from Monday, I mentioned that I had a fun <strong>announcement </strong>and idea that you could participate in and share.</p>
<p>For the month of September, I want to create a series of posts that share &#8220;fun, simple, healthy and cost saving meal ideas&#8221;.  A slight variation on the idea is that if I have enough participation I will <strong>post every day of the month</strong> or at least the weekdays.  So here is where the fun comes in &#8211; I am asking all the readers whether you have a blog or not to send me a recipe with a picture that fits the topic and I will post it and link back to your blog or give credit however you would like.</p>
<p>Sound fun?  I think so.  I committed to my niece that I would <strong>&#8220;Get Zesty&#8221;</strong> and share some simple ideas to get them through the dinner time on their own.  To join in and help students all over the world &#8211; just <a title="Contact Zesty" href="http://zestycook.com/contact/" target="_self">pop me an email and submit your recipe/idea</a> and I will take it from there.  I would like to thank everyone in advance for taking the time to help.</p>

<p>Let me start off by saying that viewer discretion is advised for today&#8217;s post.  OK now with the story that preludes possibly the greatest brownie I have ever sunk my teeth in thus far in my life.  Last Saturday Mrs. Zesty had a baby <strong>shower </strong>to attend and she was designated for a <strong>dessert/sweet</strong> treat for the girls.  Last week was a bit of a zoo and I think I forgot about prepping this dessert until Friday afternoon at work.  After work I did a quick scan for some ideas and came up with a <strong>chocolate caramel brownie</strong>.  I figured that would be a hit with a &#8220;<strong>bunch</strong>&#8221; of girls.</p>
<p>I knew time was tight and I didn&#8217;t want to spend all night Friday night to prep a dessert.  With that said, I counted on Google and did a quick chocolate caramel brownie search.  At that point you can say my life may have <strong>changed </strong>forever.  See below for all the details.</p>

<p>This recipe, I cannot take any credit for and nor will I try as it is compliments of <a title="Brownie" href="http://www.verybestbaking.com/recipes/detail.aspx?ID=28703" target="_blank">Nestle Toll House</a> and as you can see from the reviews&#8230;. I am not the only one that liked them.</p>
<h3>Ingredients</h3>
<ul>
<li>1 pkg. (18.25 oz.) chocolate cake mix</li>
<li>1 cup chopped nuts ( Optional )</li>
<li>1 cup Evaporated Milk</li>
<li>1/2 cup (1 stick) butter or margarine, melted</li>
<li>35 (10-oz. pkg.) caramels, unwrapped</li>
<li>2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels</li>
</ul>
<h3>Method</h3>
<ol>
<li>Preheat oven to 350° F.</li>
<li>Combine cake mix and nuts in large bowl. Stir in 2/3 cup evaporated milk and butter (batter will be thick). Spread half of batter into ungreased 13 x 9-inch baking pan.</li>

<p><em><strong>Zesty Tip:</strong> The only tip I could recommend for this recipe is too make it at least in double batch form.  It is absolutely amazing. </em></p>
<p>If you like gooey, chocolate, caramel and oh did I mention <strong>brownies</strong>&#8230;. if so you have to make these TODAY!  As I know a lot of people have great brownie recipes from scratch but too follow this recipe which literally takes 10 minutes to prep, the results are so <strong>satisfying</strong>.  Girls if you are reading from the shower, let me know what you thought of the brownie in the comments.</p>

<p>2 Days until Christmas!!  Good morning and welcome to another exciting blurb from yours truly.  Today is the day we have been waiting for the last six months &#8211; We are moving in TONIGHT!  The Upholstery cleaning team did their thing and we are good to go.  We worked at the house until about midnight last night trying to get the bedrooms prepped and I think we are ready to take the plunge tonight.</p>

<p>As promised from yesterday&#8217;s post &#8211; I told you I would get a little closer with a fantastic dessert delivered to the party by a &#8220;zesty&#8221; cousin.  I am a pretty huge fan of bread in general but when you throw it into a bread pudding dessert, I pretty much fly off the handle with excitement.  When I caught a glimpse of the bread pudding and  heard rumblings that it was in the kitchen I went scouting with the camera around my neck, snapping pictures left and right to get a good shot for you. </p>
<p>Cranberries inside the bread pudding is so festive and exciting.   It was so delicious, moist and the sauce was crazy good.  Check it out below: </p>
<h3>Ingredients</h3>
<p><strong>Pudding</strong></p>
<ul>
<li>1 Quart milk</li>
<li>2 Cups sugar (I use 1 white, 1 brown)</li>
<li>1 Cup dried sweetened cranberries</li>
<li>6 eggs, lightly beaten</li>
<li>2 tablespoons vanilla</li>
<li>1 Tsp. baking powder</li>
<li>1 Tsp. ground cinnamon</li>
<li>2 Loaves of white bread (Cut off all crust, cube andf then dry the cubes out on a baking sheet in a low 200 degree oven)</li>
</ul>
<p><strong>Sauce </strong></p>
<ul>
<li>2 Cups brown sugar</li>
<li>1 Cup cream</li>
<li>3/4 Cup butter</li>
<li>1/2 Tsp. Vanila</li>
</ul>
<h3>Method</h3>
<ol>
<li>Preheat oven to 350°F. Spray 13X9-inch baking dish with nonstick cooking spray.</li>
<li>Combine 1 quart milk, 2 cups sugar, cranberries, eggs, vanilla, baking powder and cinnamon in large bowl; stir until well blended.</li>
<li>Add bread and toss to blend thoroughly.</li>
<li>Pour mixture into prepared dish.</li>
<li>Bake 50 to 70 minutes or until golden and knife inserted into center comes out clean.</li>
<li>For sauce, mix sugar,cream and butter; bring to a boil in small saucepan.</li>
<li>Heat over medium-high heat, stirring frequently, until butter melts and sugar dissolves.</li>
<li>After about 3 minutes and the sauce begins to thicken add vanilla.</li>
<li>Remove from heat.</li>
<li>Cut bread pudding into squares.</li>
<li>Spoon sauce over each serving.</li>
<li>ENJOY!</li>

<p><em><strong>Zesty Tip:</strong> Feel free to use raisins instead of cranberries if you want to go the more traditional route.  Nothing else in the recipe has to change to accommodate the raisins.</em></p>

<p>Good morning, good evening or goodnight&#8230;. depending of course on when you are reading this delicious post.  We had a very productive weekend &#8211; lots of things are happening.  We completed the back splash in the kitchen, and the painter put the final two coats of verathane on the stairs (they look amazing).  We then emptied half of the storage trailer into the basement/garage and we even did some Christmas shopping.</p>

<p>I am not going to show you any more pictures until the final reveal next week.  We are so close to being complete I can hardly stand it.  We have professional cleaners coming in on Wednesday to do a thorough cleaning from top to bottom.  Once everything is complete I will do a whole post dedicated to the house so stay tuned.</p>
<h3>On to the Food</h3>
<p>I am pretty sure you are going to like today&#8217;s post.  It resembles some more Christmas baking like the fudge but this cake can be made year around for your enjoyment.  I can pretty much eat this cake in large chunks throughout the day but I have issues.</p>
<p>As you will see in the recipe below &#8211; I think the key ingredient is the cream cheese.  It keeps it moist and the texture soft.  It is quite simple to make and you do not necessarily need to use a bundt pan if you do not have one.  You can just use a large loaf pan.</p>
<h3>Ingredients</h3>
<ul>
<li>1 Cup Butter</li>
<li>1 1/2 Cups White Sugar</li>
<li>4 Oz. Cream cheese, softened</li>
<li>4 Eggs</li>
<li>1/2 Cup Milk</li>
<li>3 Cups White All Purpose Flour</li>
<li>2 Tsp. Baking Powder</li>
<li>1 Tsp. Salt</li>
<li>1 Tsp. Vanilla, almond and lemon flavoring</li>
<li>1 lb. Gum Drops ( the baking ones)</li>
<li>1 Cup Flavored Cherries ( optional )</li>
</ul>
<h3>Method</h3>
<ol>
<li>Preheat oven to 350 degrees</li>
<li>Cream together butter, sugar and cream cheese and then beat in eggs one at a time.</li>
<li>Add flavoring; sift in dry ingredients, saving 1/2 cup of flour for gum drops and cherries.</li>
<li>Add dry ingredients and milk into previously creamed mixture; stir in gum drops and cherries</li>
<li>Transfer to bundt or loaf pan.</li>
<li>Bake at 350 degrees for 1 1/4 Hours.</li>

<p><em><strong>Zesty Tip:</strong> By adding the half cup of flour to the gum drops and cherries it will prevent them from sticking together and staying in clumps throughout the cake.</em></p>
