I have been craving homemade muffins without a huge amount of oil.  I recently picked up a new box of granola (fiber and flax) so I thought I would incorporate that into a basic muffin mixture with some apples.  This is what I came up with.  A delicious muffin, moist on the inside with a little crunch on the outside from the granola.

I was really impressed with the texture of the muffin, although I did find that maybe the apple was a little “BLAH“.  Next time, maybe I will add some flavor to the apple before hand.

Happy Friday everyone!  Another week is almost over… crazy isn’t it.  I thought I would share with you a simple muffin that you can make when you need something sweet in a hurry.  I made these a few weeks ago and they are actually pretty tasty.

These muffins are very flexible.  You can mix it up by switching the nuts to pecans as well as adding some of your favorite dried fruit in them as well.  Dates would also work really well.  This one is super easy and a great Sunday morning treat for the house to wake up too.
