A Week Night Rush!


Ummmm Hi… I can’t really stay and chat for very long.  Ever feel like all you do is rush around to meet time lines and appointments?  Not only do the days fill up but now we are into the evenings, especially with summer finally here.  Soccer nights mean for a rushed dinner but you still have to eat!

Last night I went with a super easy menu that takes minutes to prepare.  The whole dish takes about 15 minutes to prepare and about 7 minutes to eat.  A simple turkey burger from frozen, grilled corn and some basmati rice ( cause I was craving it ).

Ingredients

  • Basmati rice
  • Fresh Corn
  • Turkey Burgers
  • BBQ Sauce
  • Tzatkiki sauce
  • English muffins

Method

  1. Simple foods made easy.  Start your rice first as it will take the longest and then chuck the corn in the grill.  For the corn I rub some olive oil and salt and pepper all over then place it on the top rack of the grill.
  2. I leave the corn on the top rack for about 10 minutes on medium-high heat rotating every few minutes
  3. Add the turkey burger on the grill and let cook 7 minutes each side.  Adding your favorite bbq sauce after each side is cooked to prevent it from burning.  Make sure not to try and move the turkey burger too early as you will find it will stick to the grill and you will lose the crust.
  4. Toast off your english muffins and then spoon on some tzatkiki sauce and call it a sandwich.
  5. ENJOY!

Zesty Tip: Move the corn down directly on the grill for the last 3-4 minutes.  This will get the nice golden brown color that everyone loves.

Alright, that is all I got today!  I have to get ready for work and I will see you all on Friday.  Special post coming up on Friday based on a special sample delivery I received.  I am pretty excited.  Oh and one more thing…. work is having a potluck on Friday – any ideas on what I should bring.  I have been hearing rumblings of the chocolate cream cheese cupcakes but I was also leaning towards the baked pasta casserole with bacon.  Let me know what you think.  I may make something totally different as well so spit out the ideas.

Chipolte Chicken and Pear Salad


Holy Salad again!  I am starting to impress myself with my eating habits of late.   This was just a quick last minute put together dinner that was tasty for sure but I was starving by 8:00pm.  Not the end of the world as you know I love eating and it was just in time for the hockey game to start.  For my evening snack I went with a bowl of cereal and my traditional handful of  “All Dressed” chips well OK, maybe 2 handfuls and a bit of chocolate at the end.

It takes me back to the sweet and salty post from a while ago.  I am definitely both!

Back to the salad

For this simple salad I went with the combination of chicken and fruit which I love.  The crisp pear was a great match for the spicy chicken.  I just had some frozen boneless chicken breasts that were done up chipolte style from the grocery store.  I roasted them in the oven for 25 minutes and chopped them up with some other fruits and vegetables.  Here is the mix.

Ingredients

  • Baby Romaine Lettuce
  • Sliced strawberries
  • Sliced Pears
  • Cooked Chicken breast
  • Balsamic vinegar
  • Cucumbers
  • Carrots
  • Tomatoes
  • Olive oil

Method

  1. Cook and slice chicken breasts
  2. Prepare all fruits and vegetables in the salad by washing and chopping to your desired sizes
  3. Organize the salad in the bowl
  4. In a small jar, mix 2 parts oil to one part balsamic – add a dash of mustard and shake.
  5. Dress the salad and serve
  6. ENJOY!

Zesty Tip: The addition of mustard to the dressing allows the oil and vinegar to combine into a nice rich texture and not break.

So there you have yet another simple salad for your Wednesday pick me up!  I don’t really have much to say other than I hope you enjoy the salad.  I am not sure what I am going to post for Friday as of yet but I did make another sweet potato dish a couple of weeks back that may be worthy of sharing.  Have an awesome hump day and keep smiling.
