Happy Monday! How was your weekend? Hopefully it was well. I put in about 30 hours of painting and prepping the basement for the floor and kitchen install this morning. But all in all it was a good weekend. On the food side of things, cooking was limited and a lot of bread was consumed. With that being said, I did find some time to haul out the juicer and splash a little fruits and vegetables into my system.
Homemade Tomato Juice? Like the ring to that? It was good but you definitely have to chill it before serving. I also had to make a few servings of carrot juice for little junior which was not such a big deal and a good way to use up some old carrots.
Tomato Juice From Scratch
- 8 large tomatoes
- 1 Large Carrot
- 2 stalks of Celery
- 1 Green Apple
- Pinch of Sugar
- In your juicer, drop in the tomatoes, carrot, celery and apple ( one at a time ) until all the fruit and vegetables are gone.
- Take the bowl of juice and stir to mix thoroughly, adding a pinch of sugar to desired taste.
- Chill for 1 hour in fridge or freezer.
Zesty Tip: When juicing, there are no boundaries. I find the best juices come from trying new combinations and cleaning out your fridge from some older fruits and vegetables instead of throwing them out. Remember as fruit and vegetables age they often release more sugar so be cautious as you sweeten your juice if you do at all.
