Tuna Salad and a House Update

by zesty on August 31, 2009 · 20 comments

Well Well Well…. Last week was a whirlwind and it feels like I am so far behind in literally everything.  I flew home from Washington DC on Friday afternoon and had to rush home for a work conference call with a client that was having some difficulty.

After that I quickly hopped in the car to go to the job site and check out the progress on the house.  When I got there – I was pleasantly surprised.  I had an inside track of the progress that was being made but to see it in front of your eyes is pretty neat.

The roof has begun!  So exciting.  I was speaking with the roofer to ensure I can schedule him when needed and discuss some final touches on the exterior finish.  We are getting to a point now where some major decisions have to be made.  I have included some more shots on the progress of the house down below.

As for a summer sandwich… this tuna sandwich is so easy.

Crisp Tuna Salad with Grapes

This sandwich really offers a unique flavor and contrast with the grapes and raisins from the bread.  I was thrilled with the results.  This is what I put together for a quick final summer lunch on the run.

Ingredients

  • 2 Pieces Raisin Bread
  • 1 Can of Chunk White Tuna
  • 1 Tbsp. Mayonnaise
  • Pepper
  • 1/4 Cup of grapes ( sliced )

Method

  1. Slice a couple of pieces of raisin bread on the thick side
  2. Drain tuna and place into a bowl

  4. Add mayonnaise and pepper.
  5. Wash and slice the grapes and add to the mixture; fold gently.

  7. Spoon some of the mixture on the bread.

  9. Complete the sandwich, slice and serve with some almonds
  10. ENJOY!

Zesty Tip: If you like your sandwiches cold like me – I like to store the tuna in the fridge.  That way, you can make and eat it right away with that chilled summer fresh taste.

Great house progress photos!

I love recipes that feature interesting new ingredient combinations, and this tuna salad sandwich looks like a fantastic one! I love grapes in chicken salad, but for some reason never thought to pair them with tuna salad. The raisin bread is also different, but sounds like a delicious flavor accompaniment. Thanks for the creative idea!

Seeing the progress of building a home is so cool. I can’t wait to see the next update.

I’ve been waiting all summer to make a tuna salad sandwich and still haven’t. I like your idea to use cinnamon raisin bread and to include grapes. Sounds delish.

I’m really enjoying watching the house go up, day by day! It’s really neat.
I love tuna salad, thanks for the recipe. I used to eat it all the time as a kid, but not much anymore for some reason…this recipe looks great.

This is another great salty/sweet combo! I actually love ham sandwiches with peanut butter on raisin bread, so this tuna sandwich combo is right up my alley. Thanks for the tip, Zest! BTW, your house is looking good…can’t wait to see the finished product (but I’m sure you can’t either!).

Tuna on raisin bread — a nice spin on an old favorite. Perfect for those cool fall days, perhaps with a bowl of tomato soup.

Thanks also for your presentation at the Healthy Living Summit; it helped inspired me to finally begin my own health blog after years of reading others’ — feel free to drop by if you have a minute. Take care.

Zesty look at your house!!! It’s look BEATIFUL!!! Totally jealous.

I thought I was the only person in the world who stored my tuna in the fridge; eveyone always tells me I’m so strange!!! It’s because I like it cold – just like you said! It’s honestly probably my all time favorite food. I’ve never thought to serve it on raisin bread; genius!

ok, that’s definitely supposed to read “beautiful”…not “beatiful”. Whoops.

Tuna with grapes on raisin bread? I think that might even be out of my tuna comfort zone. I could see it as a chicken sandwich though. I’m not too sure about the fish + raisins deal though. I guess you can’t knock it til you try though ;)

The house is really shaping up and looking great!
I just love good old-fashioned tuna sometimes. This is a nice twist with the grapes and raisin bread :) Kind of a salty/sweet thing, which I love!
